Roasted Dill Potatoes
This roasted dill potatoes recipe creates a delicious side dish with unexpected flavors. The cooking technique is simple and reliable: adding a small amount of water to the roasting pan ensures the potatoes are tender inside while the skin turns crisp and golden.
Ingredients
This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly. Original recipe (1X) yields 4 servings.
Directions
- Cut the yellow baby potatoes in half and place them in a baking dish. A 9×9-inch baking dish works well, but you can use any size you prefer.
- Season with salt and pepper to taste, then drizzle with olive oil. Mix everything together. Use a spoon to push the potatoes slightly to one side in a corner of the dish, and pour in the water.
- While the potatoes are roasting, finely chop the garlic and fresh dill. As soon as the potatoes come out of the oven and are sizzling hot, immediately add the garlic and dill, and mix well.
