Serve this colorful salad platter with roast or barbecued meat or chicken.

Ingredients

1 cucumber
1/3 cup white wine vinegar
1/2 tsp. salt
Green leaf lettuce
1 medium orange, peeled and sliced
1 large avocado, peeled and sliced
1 medium tomato, sliced
1/2 white or red onion, cut into rings
8 to 12 pitted black olives
Fiesta Dressing (below)

Directions

1. Use a parer to cut a few lengthwise strips of peel from cucumber. Then cut into slices. Combine in a small bowl with vinegar and salt. Marinate for 1 hours.

2. Line serving platter with lettuce. Arrange slices of orange, avocado and tomato in rows.

3. Drain cucumber slices, reserving marinade for dressing. Arrange on platter.

Scatter onion rings and olives over the dop. Spoon dressing over all and serve.

Fiesta Dressing: To reserved cucumber marinade, add 1/2 tsp. grated orange rind, 1/2 tsp. chili powder and 1/3 cup olive oil. Whisk to blend just before spooning over salad.

Comments

If you want to assemble this salad in advance, sprinkle avocado slices with lemon juice. Cover entire platter with plastic wrap and refrigerate.
